作者還舉了用分子烹飪法發(fā)展烹飪事業(yè),在Chicago 的Moto用molecular gastronomy 突破傳統(tǒng)烹飪愕够,把taste menu 變成Italian panini sandwich ,或者由chocolate, frozen mango,cheesecake 制作而成實際看起來Mexico nachos(墨西哥烤干酪辣味玉米片)走贪。
