一.Vienna? style? petits? fours
材料:
135g?????????????? egg?? yolk(7個(gè))
225g?????????????? marzipan
100g?????????????? sugar? caster
??????????????????????? vanilla
??????????????????????? lemon? zest
a pinch??????????? salt
350g????????????? egg? white(12個(gè))
125g?????????????? caster? sugar
225g?????????????? plain?? flour (sift過濾)
225g?????????????? butter( melted)
做法:
1.把marzipan放入mix中用paddle攪拌一會(huì)后放入egg? yolk傅是,然后倒入100g sugar鹏秋,倒入一點(diǎn)vanilla,打到soft后拿出來
2.把butter融化好琅轧,flour sift 3 次相寇,在flour中倒入lemon? zest
3.拿出另一個(gè)碗,倒入egg? white 用whisk在mix中打,一點(diǎn)一點(diǎn)加入sugar赠幕,慢慢地加,直到打到白色询筏。關(guān)掉機(jī)器劣坊,將蛋白加入1步混合物中(一點(diǎn))攪拌,再加一點(diǎn)egg white屈留。然后加一點(diǎn)flour攪拌局冰。再加egg? white和flour,攪拌灌危。以此類推康二,直至egg? white和flour全部加完,然后攪拌
4.直至3步中的混合物完全混合勇蝙,加入butter(溫度要冷卻好)沫勿,然后攪拌均勻
5.把混合物倒入tray上,用band? knife鋪平在tray上味混,放入烤箱烤5-7分鐘(170°)
6.拿出來放桌上撒上sugar产雹,蓋上布
二. Rocher? coco
材料:
125g????????? sugar
??????????????????vanilla
3no.?????????? eggs
25ml???????? honey
30g?????????? coconut
做法:
1.sugar+? coconut + egg + vanilla + honey混合一起攪拌好
2.扭成三角形狀,放入烤箱烤10-15分鐘(180°)
3.拿出來后在上面撒icing sugar
三.? vanilla?? crescents
材料:
250g????????????? plain flour
80g??????????????? icing? sugar
pinch????????????? salt
200g?????????????? butter
100g?????????????? hazelnut? meal
40g???????????????? egg?? yolk( 2 No.)
?????????????????????? vanilla+ sugar (混合)
做法:
1.butter + icing? sugar+? salt 放在mix中攪拌
2.于此同時(shí)過濾flour
3.第1步中開到10檔攪拌翁锡,一個(gè)一個(gè)加入egg? yolk
4.加入 flour和 hazelnut meal
5.打好后用保鮮膜包起來放入冰箱半個(gè)鐘頭待用
6.于此同時(shí)把vanilla? bean切開蔓挖,拿出中間的bean 與sugar混合在一起
ps: sugar: vanilla = 150: 1/4
7.從冰箱拿出來,切成小塊(20g)扭成U形狀馆衔,在6的材料中沾一站瘟判,放入烤箱烤5分鐘(170°)

一.Vienna? style? petit? fours
材料:周二做好的Vienna
?????????? jam+ color調(diào)勻
做法:
1.把周二做好的切成四塊(六塊或者八塊),在上面抹jam + color角溃,蓋上另一層拷获,再抹,以此類推减细。然后在上面蓋一張bake? paper匆瓜,用chop board壓在上面,放入 frozer ?(冷凍)
2.拿一塊marzipan未蝌,放在bake? paper中間驮吱,用搟面杖壓平
3.把之前做好拿出來,壓最上層抹上jam 树埠,再蓋上上marzipan糠馆,壓一壓放冰箱
4.拿出來切掉邊,切成小正方體怎憋,放入融化好的fonneand又碌, 沾好后拿出來放在baking paper上(tray 上)
二.Madeleines
材料:
150g?????????????? butter( melt)
2????????????????????? eggs
200g??????????????? caster? sugar
25ml?????????????? milk
?????????????????????? vanilla???? essence
250g?????????????? baked? flour
10g??????????????? baking?? powder
25ml????????????? milk
做法:
1.把150g butter放在pot中用small fire 融化(melt)
2.把mould 用melt 的butter(另外)九昧,抹上一層,再用sugar轉(zhuǎn)上一圈毕匀,待用
3.flour 和baking powder用seive過濾
4.打好雞蛋 + sugar用whisk手動(dòng)攪拌一會(huì)铸鹰,邊黃后加入milk
5.直至butter融化到味道變了后倒出來放在bowl中冷卻一會(huì)
6.把第4步打好后倒入flour 和powder中,加入milk攪拌一會(huì)皂岔,倒入butter蹋笼,攪拌后放入pipping bag,擠到mould中躁垛,放入blueberry(放在中間)壓一壓 (80%不要太滿)
7.放入烤箱烤5-7分鐘(200°)
8.拿出來后撒上icing? sugar
